I have loved spicy food and hot sauce all my life and fancy myself as an amateur connoisseur if you like.
Normally the higher the heat in a sauce the more "monotonous" the taste would be with little depth. Sauce with a rich undertone, a complex flavor tends to be not very hot.
Your hot sauce is definitely one of the hotter ones I've tasted but it has a very full "rich" taste that develops in your mouth from a fruitiness in the beginning like (Indonesian chutney) which then goes over into a hot "BBQ sauce" like taste and finally it ends with what I will call a nutty like after glow. I hope I express myself correctly but what I'm trying to say is that your sauce is hot but complex and good for a condiment in everything from fish, chicken, red meat and even eggs.
The sauce we have is a 280 ml bottle that says Alvin's hot sauce on the top then "Taste the rush" underneath it and then Hot Pepper Sauce below that. I would say it is definitely yellow but there is a some very small red pieces in it and my wife says that it could be described as "reddish"
I have travelled quite a bit in my life and have tried hot sauces from a variety of places. Until I tasted yours, my favorite was peri-peri sauce from Mozambique but now Alvins is by far number one in my book. I will always like Tabasco and the classic American Frank's Red Hot, there will always be a place for a bottle of Sriracha in my pantry but when I used the last of my Alvin's the other night, I felt a slight panic come over me because I could not bear the thought of being without it...
